Crab and Corn Gems
Place crab, corn, onions, seasonings, lime juice and 1 egg into a food processor.
Process with an on and off action until corn is hopped and mixed in. Measure
out heaping teaspoonfuls of mixture and roll in bread crumbs. When all
chill 30 minutes in freezer. Beat remaining eggs; roll crab balls in egg
and again coat with bread crumbs. Preheat oil in Presto® electric deep
fryer. Fry gems 3 to 4 minutes or until golden brown. If desired, serve with
yogurt or sour cream flavored with lime juice and salt.
