Chicken with Fruit Sauce

  tablespoons unsweetened pineapple juice
  tablespoon dried cranberries
  teaspoon crushed red pepper
  small clove garlic, minced
  tablespoons red current jelly

  tablespoon vegetable oil
  chicken breast, skinned & boned, cut in half lengthwise
  cup water

  ear of corn, frozen
  red potato, cut into wedges
  cup brussel sprouts, frozen

How to Prepare:

1. Chicken with Fruit Sauce: Combine the first five ingredients in a small saucepan. Bring mixture to a boil; COOK 7 MINUTES or until mixture is thick and syrupy. Keep warm. Pour oil into 4-quart Pressure Cooker. Brown chicken on all sides. Remove chicken. Place cooking rack and water in pressure cooker. Place chicken on rack. Spoon half of fruit sauce over chicken.

2. Assorted Vegetables: Place corn, potato wedges, and brussel sprouts on cooking rack.

3. Pressure Cook: Close cover securely. Place pressure regulator on vent pipe. COOK 4 MINUTES, at 15 pounds pressure, with pressure regulator rocking slowly. Cool Cooker at once.

4. To Complete: Remove chicken and vegetables from pressure cooker. Spoon remaining fruit sauce over chicken. Season vegetables as desired.
